Mango: A Sweet Cousin of Poison Ivy

Mango — มะม่วง (ma-muang) — Mangifera indica.

Mango — ma-muang. It carries a yellow pigment called mangiferin. Researchers measured mangiferin against markers of damage in heart and brain tissue in animal oxidative-stress work. The edible part is the fruit, which is also rich in vitamin C, vitamin A (beta-carotene), folate, and vitamin B6. Vitamin C helps build the collagen in your skin and supports a normal immune system, and it adds antioxidant activity that helps protect cells from oxidative stress. Vitamin A supports normal vision and keeps your skin and tissues healthy, and it backs a normal immune system. Folate supports normal cell division and blood formation, and it matters most before and during pregnancy. Vitamin B6 helps turn food into energy, supports normal nervous-system function, and helps your body make red blood cells.

Khao Niao Mamuang is ripe mango with warm sticky rice cooked in sweetened coconut milk, topped with salted coconut cream. Yum Pla Duk Foo pairs crispy catfish with tangy shredded green mango salad, usually with jasmine rice. The skin is edible but astringent, and the unripe green flesh is shredded into Thai salads. Eat mango with a little fat, since its provitamin-A pigment is fat-soluble and absorbs better that way.
