Opening

That knobby ginger 'root' is an underground stem called a rhizome, where the plant banks its fuel and its fire. The heat comes from gingerol, which softens into something warmer and sweeter as it cooks. Ginger — ขิง, khing. You eat the rhizome, julienned into stir-fries or simmered into broth.
