Thai Muskmelon: The Melon Chilled In Coconut Milk

Thai Muskmelon — แตงไทย (taeng-thai) — Cucumis melo.

Cut a ripe one open and the whole kitchen fills with a soft floral smell. The pale flesh is about ninety percent water and lightly sweet — Thai cooks scoop it straight into cold coconut milk with a little salt and sugar. It carries vitamin C, potassium, fiber, and the beta-carotene your body turns into vitamin A. The part on your plate is the ripe flesh and its soft inner seeds.

On a hot Bangkok afternoon there is nothing better — pale, floral flesh scooped cold into coconut milk with a pinch of salt and sugar. That is muskmelon at its best: simple, cooling, barely sweet.
