Neem Shoots: Why Thais Blanch This Bitter Green

Neem Shoots — สะเดา (sa-dao) — Azadirachta indica.
Neem — sah-dao. Cooks blanch its shoots first because the bitterness is intense. The edible part is the leaves. In-vitro studies report neem limonoids with antimicrobial activity and starch-enzyme inhibition. It's rich in vitamin C, beta-carotene, calcium, and iron. Calcium is needed to maintain strong bones and teeth, supports normal muscle and nerve function, and contributes to blood clotting. Sadao Nam Pla Wan features blanched bitter neem shoots paired with savory grilled catfish or grilled prawns and a sweet tamarind dip that perfectly balances the bitterness. Yam Sadao Nam Prik Pao is a traditional salad of charcoal-roasted neem shoots tossed with grilled chicken in a sweet chili paste and topped with rich coconut cream.
