Bamboo Shoots: Why You Must Boil Them First

Bamboo Shoot — หน่อไม้ (no-mai) — Dendrocalamus asper.
Raw bamboo shoots contain cyanogenic compounds, which is why they must be sliced and boiled before eating. The edible part is the young shoot. In a lab fermentation model, bamboo-shoot fiber fed bacteria in the culture. A cooked serving has potassium, manganese, copper, and fiber. Copper helps your body use iron, supports normal energy metabolism, and helps maintain connective tissue and nerves. Fiber adds bulk to meals, can help with fullness, and can slow carbohydrate absorption as part of a mixed diet. Soop Nor Mai tosses shredded bamboo shoots with herbs and roasted rice, then serves the spicy salad with warm sticky rice. Gaeng Nor Mai cooks bamboo shoots in a green Yanang-leaf broth and is served with sticky rice and raw vegetables. Eat only the young shoot. Opening
Cut a fresh bamboo shoot straight from the ground and it can carry natural cyanide, which is exactly why bamboo shoot — หน่อไม้, nor-mai — is always sliced thin and boiled before it goes in the pot. Only the pale young shoot is eaten, snapped off while it is still tender. Boiling drives off the bitterness and the toxin together.
