Santol: Sour Thai Fruit Pounded With Chili

Santol / Cotton Fruit · กระท้อน · Sandoricum koetjape

Santol / Cotton Fruit — กระท้อน (kra-thon) — Sandoricum koetjape.

Santol — kra-thon — a sour cotton fruit whose fluffy white pulp cooks pound into a spicy relish, plus how to eat it and what the research covers. The pulp clings tightly to the seeds, which you spit out, and the pulp is the edible part. A 2022 scoping review found santol triterpenoids studied mostly in lab assays for inflammation and cancer cells. For santol nutrition, the fruit contains vitamin C and potassium. Vitamin C helps build the collagen in your skin, supports normal immune function, and works as an antioxidant that protects your cells. Potassium supports normal blood pressure, keeps your muscles and nerves working, and helps balance your body's fluids. In Krathon Song Khruang, the peeled fruit is scored, coated in a coconut-sugar sauce, and topped with toasted peanuts, dried shrimp, and chilies. In Kaeng Khua Krathon Kung, sliced santol simmers with prawns in a coconut-milk red curry, where its sourness cuts the richness. You can eat the soft pulp fresh or pickled. Spit out every seed; the sharp edges can injure or block your gut if swallowed. Follow Longevity Biome for a new Thai plant every day.
