Mangosteen Studies Use the Rind You Throw Away

Mangosteen — มังคุด (mang-khut) — Garcinia mangostana.
A lab study exposed YD-15 oral-cancer cells to concentrated alpha-mangostin from the bitter purple rind; it did not test eating the sweet white flesh in people. The edible white flesh contains fiber and vitamin C. Fiber adds bulk to a meal and can slow carbohydrate absorption as part of a mixed diet. In Yam Mangosteen, cooks toss peeled white segments with shrimp, lime, fish sauce, and fresh chile, then serve them with coconut curry. Mangosteen Khat uses the unripe green fruit, peeled and rinsed to cut sticky latex, for a crisp sour bite. The rind stays bitter and inedible; the white flesh is food.
